Wanchai's new knife cut noodle joint

This new knife cut noodle joint has just opened in Wanchai. It doesn’t have an English name, but the Chinese translates along the lines of Ten-Ingredient Shanxi Knife Noodle Restaurant. Catchy, yeah? Anyway, English name or not, we dropped in to check it out. Dishes are generally in the sub 50 dollars range, placing Ten-Ingredient Shanxi Knife Noodle Restaurant firmly in affordable lunch territory.

For the uninitiated, this style of noodle is made by shaving strips from a large block of dough using a knife. This results in a thick, short noodle with a distinctive bouncy texture. We splashed out a full 50 bucks on the shredded chicken spicy noodle soup.

The noodles were just right texture-wise while the chicken and other ingredients were good quality and came in a decent-sized portion. However, the soup could’ve been a little spicier. It wasn’t not spicy. It just didn’t have quite the kick that you’d expect from a bowl found in a genuine Shanxi streetside diner. But then, Ten-Ingredient Shanxi Knife Noodle Restaurant isn’t a genuine Shanxi streetside diner, it’s a good-value-for-money lunch spot in Wanchai.
