Private Sommelier Service

A private sommelier service has been launched in London and Hong Kong. Sarment brings together some of the industry's award-winning sommeliers from the world's top restaurants who are individually matched to members with complementary tastes. The tailor-made service is available seven days a week from anywhere in the world.

The idea behind Sarment is based on the relationship between founder, Bertrand Faure Beaulieu and sommelier, Philippe Messy. Ten years ago, the pair met in Marco Pierre White's restaurant, where Philippe Messy was the youngest ever head sommelier of a three Michelin-starred restaurant. Philippe invited Bertrand to broaden his tastes in wine and inspired him to explore new vintages outside of his comfort zone. Bertrand explains, "I had found a sommelier who was not only empathetic and exceptionally talented, but was not afraid to challenge me. He was never patronising; he simply had a passion for sharing great wine." 

Membership to Sarment is by invitation only with no more than 75 memberships to be released globally this year. 

Tiffin's Dinner Buffet

Tiffin's has just launched a dinner buffet showcasing a variety of European and Western dishes. Available nightly, the selection includes a salad bar complemented by condiments, seafood on ice, carving stations with Spanish Iberian Recebo Ham and Slow Cook Beef Tenderloin, hot dishes featuring international cuisines, a cheese table and a vast selection of Tiffin's signature desserts.

Highlighted items include Poached Scallop with Salmon Caviar on Marinated Seaweed; Dill Marinated Norwegian Salmon Roulade with Cream Cheese; Pan-fried King Prawn with Butter Lemongrass; Sautéed Mussels with Fresh Herbs; Foie Gras Crème Brulee with Lobster Ragout; and Lobster Truffle Tarte.

There is also entertainment from the hotel's band. 

The buffet is available from 6.30-10pm and is priced at $538 adults and $269 children $269.

Pearl on Peak's Set Lunch

Pearl on the Peak has a weekday set lunch that can be had for as little as $98 (mains choice examples - pizza, burger, gourmet sandwich) for a salad or soup, a main and dessert. The most expensive set lunch is $258 (eg, lobster risotto, lobster pasta), with most being under $160. The menu changes regularly and there is always a choice of seven mains.

Le Soleil's Summer Menu

Le Soleil  has a new, summer menu. Signature items include Chilled Mantis Prawns, served with a light Mustard and Shrimp Sauce; Apple Salad tossed with Shredded Roasted Duck and Mint; Goose Liver and Lobster Paste served with French Toast (made from a secret family recipe); Braised Roasted Duck Curry with Lychee and Deep-fried Mandarin Fish marinated with Lemongrass and Shrimp Paste.
