Anyone who went to boarding school in the UK can testify how horrible brussel sprouts are. Those frozen green balls were overcooked and bland, and don’t even get me started on the smell.
I had thought I would never let another one of those get past my lips until I had a taste of the fresh ones in California recently. They are cut in half, tossed in olive oil, salt and pepper, and then popped into the oven for ten minutes or so until the edges begin to brown. They are then flipped over and popped back into the oven for another ten minutes. The result? Crispy on the outside, tender on the inside.
They are a delicious side dish that is easy to make and very good for you. Just go easy on them as they cause gas. Remember the smell I mentioned earlier? Not so delicious. Happy New Year!
