Meet your Maker – Rainer Becker
10.11.2008
Award-winning chef Rainer Becker is the man behind Japanese restaurants Zuma and Roka. He has a deep-rooted love of Japanese cuisine, which began when he was challenged with the task of presenting fine dining at Japan’s exclusive luxury hotel, the Park Hyatt in Tokyo.
Decadent Dining – Zuma
10.11.2008
The latest celebrity chef to hit town is Rainer Becker with Zuma, the sister restaurant to the award-winning London restaurant of the same name. This is a restaurant that sets out to impress, from its sheer size – 10,000 sq. ft, to the high ceilings and enormous granite boulders that jut out in sculpture-like forms, to the three open kitchens, and the dramatic spiral staircase that leads you to the trendy lounge and bar area. Oh, and of course there is the food.

Free-Flow Buffets
12.05.2009
There are many perfect combinations: chocolate and sex (both of good quality of course), sunsets over the ocean when on holiday, and baths with bubbles. One other perfect combination that involves bubbles of a different kind, is buffets that serve free-flow champagne or sparkling wine. Even people who don't drink regularly will indulge in a glass, especially if paired with a fresh oyster or succulent seafood. In the second of our ongoing buffet series I take a look at free-flow buffets, and highlight a few places that do it well.

"Do not be afraid of cooking, as your ingredients will know and misbehave" -Fergus Henderson. This is the motto of the chefs at Corner Kitchen: owner/chef Vivian Herijanto, formerly of Jean-Georges New York, and new recruits Nathan Hogan of Azure among others and finally Dan Segall of hit restauant ZUMA. "Instead of cooking a rote recipe we offer a full culinary experience," explains Hogan.

To Eat or Not To Eat

Everyone loves Japanese food. Especially sushi and sashimi. With an emphasis on raw fish, they are a spring clean on a wooden tray — or conveyor belt — the epitome of fresh, beautiful and healthy. Or are they?

maybe this is good for London
bigcatny | Mar 22 2011
For me it's more style than substance and seriously overpriced. i don't mind paying for GREAT but I don't like getting pretty good at great pricing and unfortunately this place falls into the latter category. They try with the food and a few items are actually pretty good but overall it does not match up to their price point. The place looks great and if someone else's expense account was paying perhaps it would be acceptable. They do have some nice touches such as a play area for children during the weekend buffet and the food looks really good.
It's not Japanese owned and the chef is a Caucasian from New York so they're performing about where I would expect.- How much did you spend?

Nice food

Had a very long and big lunch here, tasting 15 dishes + desserts. Just about all of them were hits. The chef's creativity and dedication was pretty evident. I've always enjoyed casual meals here and avoided ordering anything extravagant, and have never had bad experiences as a result.

Food high quality, service low
leevidaga | Feb 24 2010
Food was a delight, ingredients, cooking, presentation all of high quality. Only the rice on the nigiri-sushi had dried and was on the hard side, meaning the sushi were made beforehand, not on order. But what to expect? This is not a sushi shop. However, considering the aspirations of this restaurant, the service was just sub-standard. Kids in black T-shirt needs to be trained by professional, preferably Japanese professional. Chinese kids speaking lousy lousy English, Western kids serving casually, inattentive and forgetful will not take Zuma to the heights where it wants to be.

I've only been to Zuma in London once, and that time I wasn't paying the bill - so it was FABULOUS!
This time I was, or at least I was paying for my 1/4 of the bill which was fine with me. But of course the critic in me was a little more sensitive than before.
So the food is really good. I was dining with 3 other people, so we decided to order 2 of the tasting menus and theyn 4 other dishes. This actually turned out to be perfect as most of the tasting dishes had 2 pcs each, so we all got to try a bit of everything. I love 'trendy fusion Japanese' so I was pretty delighted with the food. But it's now rather same same if you know what I mean. I could have closed my eyes and been in Nobu. The Black Cod and the Salamon Terriaki was exactly the same as Nobu dishes.
They did do a filet steak dish that was delightful, and the chocolate fondat cake was even better.
The service was rather surly, but again that's sort of what I expect from these kinds of restaurants these days. The secondary server was lovely, but the main girl was just under the 'very arrogant' barrier. Also, not one manager came over to say hello or check our satisfaction, even though there were about 4 of them wandering around. That annoys me. It's just a small touch but it really makes a world of difference.- How much did you spend?

Price of Ambiance
C | Oct 1 2009
After several visits (Lunch, Dinner & Sunday Brunch),the question of "How much does one pay for ambiance?" pops up. Yes, the floor to ceiling glass windows provides a great view of central, both day and night, is great. Outside verandah also provides an opportunity to have a drag between the sushi and the mains. But for the price you pay, the food and service is brings down the value proposition. Personally, I think the food has good variety, sushi, skewers, etc.. but there is nothing really stood out. Ingredients were good, just not the quality you pay for.
We had a room reserve for Sunday brunch, and it was great. Until the ice-filled plate of deserts appeared and did not agree with the funky wooden table. Before long, water is seeping through the holes of the table and onto the floor. It was flooding in there! Unfortunately the waiters were not alert enough of the situation, so we left before we drowned.- How much did you spend?

Sunday brunch!
Tim | Sep 14 2009
Agree with the comments below, the Sunday brunch deal is fantastic! Good selection of Japanese food, a bit fusion and modernised, but good! Free-flow champagne is just what is needed for a Sunday brunch! Been there for dinner as well, and the food is of very high quality. Again, if you are a traditionalist, you may cringe, but the fusion food works.

Sunday Brunch
rob naylor | Apr 9 2009
Its one of HK best brunches - laid back, casually stylish, with just great Japanesey fusion food .....fresh, wonderful sushi, sashimi, tempura, Japanese salads, chicken, and teh free flow of chaampagne is just the icing on the cake. I selfishly hesitate to recommend it as it will get even busier....!!!
