Back in my chef years, I got 'promoted' from chef of my own kitchen to what is called the 'opening chef' for a restaurant supergroup. The gig was to travel around the country and assist in the new openings of other branches of the group. For several months at a clip, my job was to set up the kitchen, hire the cooks, sous chefs and eventual head chefs when I left, and train them mercilessly in the pre-opening stage on how to make the dishes, the rigorous standards, how the flavours worked together, the presentation, then beat this into the heads of the generally recreational substance-experimenting service staff and then stay a month or two to make sure everything ran smoothly...

While there is not much to be said for the food and the wine is seriously overpriced, the outdoor "steps" seating is absolutely fantastic if you are with your dog. Ask nicely and you can get outdoor service. If you plan to eat the steps, be simple in your ordering - like the passable pizzas. If it requires two hands to eat, you will be too busy with your leashes to enjoy. Bring your own water bowl, though.
