Behind the Kitchen Doors: Episode 20
06.01.2010
If you're hoping for a tale of newfound redemption in a Biblical way this might not be it, but I wanted to share something positive. This is about the people behind the food.Okay, one Biblical reference.Once again my computer is 'overused' so I send my dispatch to you via email, and by some Christmas miracle I discovered my camera card can be fed into the drive. Some of these pics are a bit 'raw' but remember, we're behind the kitchen door and not in PR land.

Behind the Kitchen Doors: Episode 4
15.07.2009
Back in my chef years, I got 'promoted' from chef of my own kitchen to what is called the 'opening chef' for a restaurant supergroup. The gig was to travel around the country and assist in the new openings of other branches of the group. For several months at a clip, my job was to set up the kitchen, hire the cooks, sous chefs and eventual head chefs when I left, and train them mercilessly in the pre-opening stage on how to make the dishes, the rigorous standards, how the flavours worked together, the presentation, then beat this into the heads of the generally recreational substance-experimenting service staff and then stay a month or two to make sure everything ran smoothly...

New Opening - RED SoHo
12.08.2009
A chic New York-Style restaurant and bar has transformed the SoHo landscape and social scene. Bustling since it opened in early July, RED SoHo extends Pure Dining's infectious philosophy of "Work Hard, Play Hard" to the other side of Central. It has quickly become a hip hotspot to eat, drink, see and be seen.

Haven't been back in a while, but this place is still pretty nice for a Sunday brunch.
Awesome burger, and a pretty good salad as well.- How much did you spend?

Truffle mac and cheese!

Ordered the truffle mac and cheese. It was pretty good, for the price. OK, so the truffle is from a jar and not that fragrant, but it is very decently priced! My friend's burger looked mouth-wateringly good too! Nice hip place, like it!

Was there for dinner last night. Menu was not outstanding but decent. The staff needs serious training. The floor manager tried to be friendly but he wasn't very natural so made the rest of us a little uncomfortable. The staff also didn't know what to do with the black truffle so we had some delicious mac and cheese with a few pitiful ROLLS (rather than paper-thin slices) of truffle.
However, the lobster roll was delicious, and the burger very tasty. The music was too loud but that also makes it a good date place because couples will need to lean towards each other.
My friends and I would go back, but not till the staff are properly trained. -
Great Addition to the Neighbourhood

Ate at RED Soho last night. The first impression is WOW! huge red lights and open windows overlooking the escalator.
Had the crab cakes to start which were the best ones I have tasted in a long time - huge pieces of crab and not alot of filler. We also had the tuna which was really fresh and simple.
For mains I had the fried chicken which wasnt greasy at all and full of flavour.
You have to save room for dessert as the creme brulee and chocolate layer cake are fantastic.
Really good wines by the glass and wine list has wines for every price.
Cant wait to go back to RED Soho - I think this will become my new favourite in Soho. -
great people watching

have been working past here since i opened and seeing that it always has people in it so went to check it out.
had some of the signature dishes as recommended by the waiter. Really enjoyed the cobb salad and the rueben sandwich, which was really good. The truffle Mac and Cheese was comforting and cheesy but a little light on the truffle taste, even the pieces of truffle did not have much flavour - a drizzle of truffle oil would help. Like the variety in the menu - some are healthy and others def not but tasty.
