Restaurant Ambiance

The restaurant design concept is a contemporary restaurant using natural materials and a blend of clean lines with light coming into play. Each of the dining areas leave instinctive impressions such as the main dining area, where lacquered tables contrast against a natural coloured backdrop.

The History of Kaiseki

In Hong Kong, I don’t know anyone who doesn’t like Japanese food, whether it is served from a speciality restaurant or from a conveyor belt. I can understand how intriguing Japanese cuisine is for many people, and I am humbled to have the opportunity to share my experiences and thoughts with WOM readers.

Versatile Miso

Versatile Miso

20.01.2011

Today, most of us are familiar with Miso, a traditional Japanese ingredient. Protein and nutrient rich, Miso is the result of fermenting ingredients such as soy bean, rice or barley (sometimes a combination); soy based miso the most common. Before refrigeration miso was used to preserve food and over time became part of the general cuisine being employed in grilling, charcoal-grilling, braising vegetables and mushrooms, as a marinade for fish and chicken, and in sauces.

Sushi – Not Just Fish on Rice

Sushi – Not Just Fish on Rice

09.03.2011

Sushi is probably by far the most popular Japanese dish and it can be eaten in many different ways. The presentation of sushi is extremely important and sushi chefs can spend a lifetime, literally, refining and honing their skills, filleting fish, selecting the best fish to buy, and knowing when and how each type of fish should be eaten.

Shiippoku-Ryori - Tablecloth Cuisine

Shiippoku-Ryori - Tablecloth Cuisine

21.04.2011

Shiippoku-Ryori or "Tablecloth Cuisine" is believed to have originated in the Edo period (1603-1868) in Nagasaki - the only port in Japan which was open to trade at that time. As a result of foreign trade the people of Nagasaki were developing cosmopolitan characteristics, even in their style of dining. One particular style the Japanese adopted from the Chinese, was the banquet style of dining or shiippoku-ryori.

    Memorable Dish at Nadaman

    Happyeater | Sep 22 2011

In a multi-course dinner at Nadaman....how's it possible I only remember one dish? Ah...I was drinking sake, that's why. It was a celebratory meal. There were dainty appetizers all presented nicely and in one bite or two. I remembered herring roe with seaweed, velvety steamed custard and among others, this gorgeous dumpling (pictured here). This dumpling is about the size of a tennis ball. Yes, it's large. It's also made primarily with a yam (taro/mountain yam). It's slightly grey in colour, but when you poke at it with your chopsticks it's slightly chewy and gelatinous. It's steamed inside the bowl it's served in, and glazed with the sauce made with chicken soup. Inside the slightly chewy dumpling exterior is a fantastic filling made with stewed beef. The texture resembled of pulled pork, but only with beef and filled with a sweet-soy-sauce aroma, so fragrant and tasty at the same time. I particularly liked the dumpling's wrapper, slightly chewy and gooey to texture. At the same time it's best to consume the wrapper with the filling and mopped up some glaze as well. It's a combination of flavour that's particularly pleasant. The dessert was also great. It's just a simple kanten dessert made with orange juice and served inside hollowed out orange halves. It's refreshing after a long filling meal.

Consistent quality you can depend on

    Foodfu | Aug 6 2010

Nadaman in Island Shangrila would be my choice for eating broad range Japanese (i.e. not just sushi/sashimi). It's menu has a bit of everything and they are all quite good.

I've been eating there for many years with friends and family, young and old. The service is always prompt and friendly. Also they do their best to meet special requests, like skinless chicken terriyaki! Besides great sushi/sashimi, the sukiyaki's sauce/broth is nicely seasoned and the tempura hot and crisp.

If you like dependable high quality traditional Japanese food and service, Island Nadaman can't be beat.

    Best Teppanyaki in HK

    JimmyQ | Feb 3 2010

Relaxed counter seating and peaceful outdoor views set the stage for the theatrics of teppanyaki cuisine. If you're lucky, you may be seated with your own chef (counters may be shared with other parties), who slice and sizzle their way through a medley of fresh ingredients, catered to your tastes right at your table. The seafood and steak lunch specials offer some of the best values anywhere in town for fine Japanese dining. The seafood selection changes with the day's fresh catch, while the sirloin is always tender and delicious (you can also opt for a leaner tenderloin cut). All set meals come with salad, soup, vegetables, fried rice, Japanese pickles and green tea. いただきます!

    Always a lunch treat...

    Juice | Feb 1 2010

Have been going to Nadaman for years and mainly for their teppanyaki. I have also had their non-teppan side but think there are better places in HK for that price for non-teppanyaki Japanese food.

Lunch provides the best value there. Though still not the cheapest meal, you will get a full set of quality food. Depending on the chef, the cooking styles are slightly different but they are all good. Having the sirlon thick cut is aready quite good. I didn't feel the need to get more marbled cuts as it can get too fatty. Do remind the chef to leave a bit of the "fat" to fry with the rice... if you are a foreigner, they sometimes automatically throw them out thinking you will not appreciate it.

Definitely one of my fave places to go for a nice weekend lunch date :) and you are ready to be full and have a light dinner after!

    Lunch Hot Spot

One of my favourite business lunch venues. I go there mostly for the same heavenly "thinly sliced beef set lunch". It is simply the best!

    Enjoyable Teppanyaki lunch

    oink oink! | Jun 1 2009

If you crave no-fuss teppanyaki, Nadaman will not disappoint you. They have quite a few teppanyaki lunch sets to choose from. From the simple 200+ to 800+. So you can decide how heavy you want to go for lunch.

I had the Chef's special which has prawns, cod (cooked western style with sake, saute onions, a dash of soy sauce and lots of butter in a miniature copper pan), thin sliced beef with garlic and onions, fried rice and soup. It was all very delectable and the chef was friendly and chatty (as we were the only ones in our teppanyaki table). I was told that thinly sliced beef with garlic and scallions are actually "heavier" than having a thick slab of sirloin. Needless to say, we also had the thick sliced steak and that was cooked to perfection too, medium RARE (very important not to overcook the nice meat)!

The fried rice was done very well for HK standards, but probably not as good as those in Japan, yet I still devoured it, not a single grain of rice left in my bowl!
    OINK!

    Expensive, but worth it

    Yang-Wahn Hew | Apr 16 2009

The views here are relaxing, overlooking Admiralty, while the atmosphere is both relaxed and quiet (though slightly less of the former quiet in the teppanyaki area).

The main story is of course the food. Almost everything here is good. The beef rice is highly recommended, although it is not listed on the menu save as part of a set. If that isn't enough, order a deep fried pork chop to share with the table. The crab/egg set is acceptable, although perhaps a bit light for those with bigger bellies.

The service, while very warm, is not the fastest in town. They seem to be very slightly understaffed as it sometimes takes a while for them to bring the bill.

It would probably be a good place to bring a date (who should of course like Japanese food) on the 3rd to 5th outing. It is equally good for relaxing family lunches on the weekend.

Overall, while expensive, it is worth it.
