Executive chef of Mandarin Oriental (Hong Kong) Uwe Opocensky is one of Hong Kong's most talented and creative chefs. This talent was finally recognised by Michelin when it awarded him a Michelin star for the Mandarin Grill in the latest guide. I caught up with Opocensky over lunch at Mandarin Grill to learn more about his most recent progressive gastronomy creations and how these discoveries translate to the plate. We also talk about his desire to create a true total dining experience.

Stimulation to all your senses

Hong Kong is lucky to have one of the very few Krug Rooms in the world. One does not go to Krug Room for a "meal"; one goes for a complete experience. From the setting to the presentation of each dish (even the presentation of the menu) is well thought out, and is unlike any other restaurant you have been.
In terms of the food, it is no doubt molecular, but you can still identify what you are eating, which is a big plus for me. The experience is more "ah, that's what it is" than everyone eyeing one another, not sure what has been put in the mouth.
Being at the Mandarin means the service is impeccable. The staff babysits all the guests and make sure everyone is pampered.

A night out at the Krug Room is an unforgettable experience. Considering the exclusivity and entire experience, it's not that hard hitting on the wallet when compared to similar experiences in Europe. The private room, impleccable service and the chance to witness the kitchen working their magic tops all expectations. Food-wise, expect a full-on molecular experience. If molecular dining gives you the thrill, then Krug Room cuisine is sure to impress. Unexpectable visual trompe l'oeils, potatoes masked as pebbles or watermelon essence in the form of compact blush. If molecular cuisine drives you mad, but not in the good way, then this is not the type of food for you.

A night to remember! Spectacular food, very unusual, very molecular. Great service, as you would expect from the Mandarin. And a very nice, light wood accented room, with a full view of the kitchen. What's more, there is krug to be drunk.
