FINDS presents Refreshing Summer Menu
FINDS introduces its seasonal menu update for the
summer.Nordic wild berries and fresh vegetables are heavily featured in the new à la carte dinner menu, along
with light fish and seafood dishes that are a signature to the restaurant. Chef Jaakko injects a taste of home into his selection of ingredients chosen for the summer menu, with rare delights including the cloudberry that only grows above the Arctic Circle, and Carelian Caviar freshly farmed in the Savonia region in Finland (which is also served at the famed Noma.
Highlights of the new summer menu include: Shrimp Toast Skagen, a classic Swedish seafood sandwich with a FINDS twist, Summer Vegetable Soup, a traditional Finnish 'summer soup' made with the first new vegetables of the season including fresh carrots and peas, cauliflower and French beans, Poached and
Pickled White Asparagus served with black truffle vinaigrette and mild goat cheese sauce, Smoked Eel
Terrine served with mustard seed vinaigrette and pickled quail egg, and Poached John Dory Fillet, which is cooked with broth instead of sauce for a light, summer variation.
Summer additions to the FINDS dessert menu include Arctic Cloudberry and White Chocolate, which offers a delicious blend of textures between the crunchy amaranth seeds and white chocolate mousse
served with cloudberry sauce, and Marinated Pineapple and Mascarpone Mousse served with blood orange sorbet for a fruity, refreshing treat.
