Established in 1828, Wyndham Estate is the oldest operating winery in Australia. The winery has won almost 2,000 international and domestic awards, and is considered the "industry pioneer" responsible for launching Australian wines onto the world arena.

Best known for its Shiraz, Wyndham Estate has just launched a new range dedicated to the winery’s founder George Wyndham. The range is exclusively available at Sheraton Hong Kong Hotel & Towers’ Wineroom.

About the Winery




Wyndham Estate is situated in the Hunter Valley (NSW), an area well known for producing premium wines. The winery exports to 47 countries, has seen a tripling of sales in the past six years, and is considered Australia’s best selling wine brand.

The success story all began when the first Shiraz grapes were planted in 1830, laying the foundation for Shiraz’s future success.

Its most popular range is the Bin range, which includes the flagship Shiraz Bin 555, which has won more than 200 wine show awards in the last 22 years. In addition to the Bin Range is the Show Reserve range, which represents the pinnacle of winemaking under the Wyndham Estate banner. Shiraz Cabernet and Chardonnay are superb examples that exemplify Wyndham Estate’s relentless commitment to unsurpassed quality and texture in winemaking.

George Wyndham

George Wyndham’s story is an intriguing slice of Australian history. In 1827, George and his wife Margaret arrived from England and settled in the Hunter Valley. As colonial pioneers, they faced many challenges including isolation, bushrangers, snakes, drought and disease – the latter claiming two of their young children. Despite many hardships, George worked the land tirelessly to provide for his family.



In 1830, George planted what is widely agreed to be Australia’s first commercial Shiraz vineyard. He could see the potential of Shiraz in Australia’s dry and harsh conditions – which he thought in fact perfect for controlling the vigour of the shiraz vine and producing outstanding wine.

By 1860, his winemaking expertise was widely recognised and his wines were being enjoyed on the international stage. In 1870, George Wyndham died but his vision and legacy lives on.

Sam Kurtz, Wyndham Estate’s current chief winemaker says, “Today, Shiraz is Australia’s most planted red grape variety and the key to Australia’s global wine success story. George Wyndham’s passion and dedication to creating fine wine is a proud legacy that endures to the present day at Wyndham Estate.”

New Range

When Kurtz decided to create wines that would pay tribute to George Wyndham, he knew they would have to display the style and excellence for which Wyndham Estate has become renowned.



Naturally, he began with Shiraz – selecting the best parcels of grapes from Australia’s most highly prized viticultural regions including Langhorne Creek, Padthaway, McLaren Vale and the Hunter Valley. Grapes were harvested at their optimum ripeness, gently crushed and fermented in small static fermenters. The wine was aged in French and American oak barrels before extended bottle maturation.

The George Wyndham range is being launched this month exclusively at the Sheraton Hong Kong Hotel & Towers’ Wineroom. The Wineroom is one of four distinct areas in the hotel’s Sky Lounge.

Sky Lounge

The new range includes Shiraz, Shiraz Cabernet, Shiraz Grenache – all 2005, Cabernet Merlot (2001) and Semillon Sauvignon Blanc (2007).

Each of the wines epitomises Wyndham Estate’s winemaking philosophy – to offer soft, generous, ripe, flavoursome wines. Accordingly, the wines offer dense colour, concentration of fruit flavour, complexity, balance and generous palate weight.

George Wyndham Range Tasting Notes

Shiraz: Deep, crimson red with vibrant purple hues. The nose shows concentrated ripe plum and berry fruit complemented with hints of dark chocolate and subtle eucalypt notes. The rich full palate displays intense spicy plum flavours balanced with well-integrated oak. It is a powerful yet elegant wine thanks to the concentrated palate, rich ripe fruit flavours, soft well-structured tannins and a lingering finish.



Shiraz Cabernet: 65% shiraz/35% cabernet sauvignon. To produce this wine, a softer, spicier style of shiraz was selected and the oak influence was lessened to ensure the cassis and berry flavours in the cabernet were evident.

Shiraz Grenache: 60% shiraz/40% grenache. Again, a soft spicy shiraz was
chosen and oak was used sparingly so the Turkish delight and raspberry fruit
flavours of the grenache were more apparent.

Semillon Sauvignon Blanc: A racy and fresh white wine made in the
unoaked style.

Cabernet Merlot: A soft, plummy wine with fine tannin.

The Wineroom

The recently opened Wineroom is a luxurious, comfortable space dedicated to providing unparalleled wine and cigar choices. The design is modelled on a private club and features handsome sofas, banquettes and leather club chairs, wooden floors, intimate lighting and personalised table service.

In addition to the exclusive Wyndham Estate range guests can also choose from an exclusive rare wine list, and the Starwood WOW List (Wines of the World) of "cellar selection" wines from around the world. All wines are served in handmade crystal stemware designed by Enrico Bernardo, an award-wining sommelier.

Also available are 24 wines that are served via the Enomatic wine dispensing system (Eno is the Greek word for wine). The Enomatic wine dispensing system is a state-of-the-art Italian designed and manufactured wine serving and preserving system that guarantees the colour, taste and aroma of the wine delivered are just like the ‘first time taste’ the winemaker intended, every time.

Regular guests will be given a wine card and by pressing of a button, you can serve the wine of your choice at 2.5cl, 7.5cl and 15cl pours, or have the staff do it for you. The beauty of the dispensing system is that with a 2.5cl pour you can try lots of different wines in a quest to determine a favourite.
