White Salmon Menu
Harlan's is offering rare wild Ivory King Salmon dishes (also known as Chinook salmon) for a limited time only. The prized delicacy from Alaska is being featured on both a promotional a la carte menu and three-course tasting menu, priced at $580. The fish is highly valued both for its rarity among migrating shoals of red-fleshed King Salmon and unique mild, sweet and buttery flavour. The five dishes on the a la carte menu are Cured Alaskan Wild Salmon with Potato Pancake, Watercress, Caviar and Honey Mustard Dressing; Pan-roasted Alaskan White Salmon with White Asparagus, Summer Truffles, Oyster Mushrooms, Chardonnay and Chervil; Slow-cooked Alaskan White Salmon with Golden Apple, Fennel, Cucumber and Beetroot Vinaigrette; Alaskan King Salmon with Hand-crafted Penne, Bacon, Fava Beans, Carrot and Horseradish Cream; and Alaskan Wild Salmon Consommé with Confit Tomatoes, Tarragon, Miso, Chardonnay and Pineapple.
