Chef Eugenio Iraci introduces an authentic Umbrian menu at The Mistral using recipes from his home in central Italy, bringing you the Italian classic flavours of the regions.
Umbrian cuisine is characteristically simple, fresh and unsophisticated, Chef Eugenio serves the recipes that had been passed down through generations and introduces the hearty and healthy dishes. The menu highlights the seasonal produce flown in from Italy and presents the signature dishes such as roasted suckling pig and traditional pasta with black truffle. Umbrian regional dishes include: Roasted king prawn with chickpea cream, caramelised spring onions and lardo bread croutons, Roasted suckling pig with broad bean stew, Homemade tagliatelle with duck ragout in Umbrian style, Traditional caserecce short pasta tossed with Italian pork sausage, pancetta and black truffle in a light cream sauce, Pine nut parfait with gingerbread scented sauce
