Festive Lunch Menus

Morton’s of Chicago is serving a choice of three Christmas season set lunch menus priced from $295 to $550 per person. The three set menus all include a choice of starter from the Morton’s Salad with blue cheese dressing, chopped egg and anchovies or classic Caesar Salad. At $295 per person, the set lunch includes a choice of entrée from Roasted Boneless Prime Rib served with Mashed Potatoes and Sautéed Garlic Green Beans or Chicken Christopher served with Garlic Beurre Blanc Sauce and Mashed Potatoes. The second set lunch option priced at$475 pp features a choice of four entrees including Single Cut Filet Mignon with Béarnaise Sauce, Grilled Salmon with Beurre Blanc Sauce, Jumbo Lump Cake with Mustard Mayonnaise Sauce or Chicken Christopher with Garlic Beurre Blanc Sauce all served with Mashed Potato and Sautéed Garlic Green Beans. At $550 pp, the third menu option includes the Single Cut Filet Mignon with Béarnaise Sauce plus a choice of Broiled Sea Scallops, Colossal Shrimp Alexander or Jumbo Lump Crab Cake all served with Twice Baked Potato and Steamed Broccoli. All menus are finished with a choice of either Key Lime Pie or Double Chocolate Mousse.

Christmas Menu

Bubba Gump is offering a 15 per cent discount on 'Early Bird' bookings for its Christmas celebrations. Complete with unlimited soda, beer and wine, the three-course feast twinning signature shrimp and seafood specialties with Traditional Roast Turkey and Christmas Pudding. The festive all-day menu is priced at $399, but discounted by 15 per cent for bookings before 15 November.

Three starter choices are Yin Yang Shrimp Salad with mango, peanuts, wasabi dressing and crispy wonton strips; Cajun Shrimp sautéed in Cajun spices served with garlic bread; or Calamari Rings with red bell peppers, pepperoncini and dippin' sauces. Main course choices include Traditional Christmas Roast Turkey with all the trimmings and Steak & Shrimp Combo, with USDA New York strip loin and skewered shrimp, served with mashed potato. Alternatively, two seafood choices are ‘…Of Course WE Have Scampi!’ of sautéed shrimp and capers with linguini or Shrimper’s Heaven of shrimp served four different ways with fries. Christmas Pudding completes the festive meal.

Seven Ways to Celebrate

The Aqua Group presents "seven stylish" festive season options.
1. Can't decide between Japanese or Italian?  Then have both at aqua roma and aqua tokyo. It will serve a five-course 'Taste of aqua Christmas' every evening from 1-28 December priced at $898 per person combining the best of Japanese and Italian cuisines. Christmas Eve will be celebrated with a six-course feast priced at $1,088 where guests can also order Dom Perignon 1999 at an extra $340 a glass, or $1,800 a bottle, or Dom Rose at $3,600 a bottle.
2. Hutong will present a seven-course Christmas Menu priced at $1088. Signature dishes will include "Kung Po Style" chilli prawns & scallops and spotted grouper fillet fried tossed with crisp fermented bean. Available on Christmas Eve and Christmas Day.
3. Shiro at Pacific Place will be offering a Japanese seven-course menu on Christmas Eve and Day for last minute shoppers priced at $488 per person including a complimentary glass of Prosecco.
4. Over in Causeway Bay, chef Iwahashi will be preparing a five-course menu of signature dishes priced at $628 at WasabiSabi on both 24 and 25 December.
5-6. tivo and vivo will both be cooking up homestyle Christmas menus in a cosy atmosphere. tivo's five-course Christmas Eve delight will be priced at $398 and vivo's four-course Italian at $488 on both Christmas Eve and Day.
7. Yun Fu will be serving a shared Chinese menu of dishes inspired by the Northern and Western reaches of Chinese with a complimentary glass of bubbly per person for $488 on Christmas Eve and Day.

Ming Court - Michelin star chef Tsang has added his own take on the season with the creation of special decadent Christmas dim sum. Available from 10 – 31 December 2009, these merry little pockets start at just $38.

For a full Cantonese Christmas feast chef Tsang has re-created all his award-winning dishes into an extravagant eight-course degustation dinner. Available 24, 25 and 31 December from 6:00pm. $888 per person or $1,288 per person with matching wines.

Tokoro – Robatayaki & Bar - Get merry Japanese style — with a seven-course celebration dinner featuring Tokoro’s hottest dishes. Served exclusively on the 24 and 25 December the first seating is from 6:15pm — 8:15pm and is $688 per person (minimum two people). Portal – Work & Play - Cocktail expert Claudio Uccello’s will be creating his exclusive Screaming Fire Christmas Cocktails all December. Portal will also serve up a petite buffet on Christmas Eve and Christmas Day with crayfish, snow crab claws, king prawns, sea snails, mussels and salmon. This is followed by a half-dozen fresh Washington oysters and your choice of main. The menu is available from 6:30pm and is $458 per person or $758 per person with unlimited Veuve Clicquot Champagne.

Gourmet Festivities

Chef Gray Kunz is presenting a season of gourmet festivities at Café Gray Deluxe. To kick start the celebrations, Chef Gray introduces a Pre-Christmas Set Menu from 1-31 December (excluding 25, 26) priced at $285 for two courses, or $345 for three courses.  A selection of private dining room set lunches and dinners are also being served from 1 December , with a sommelier at hand for wine pairing. Menus start from $455/$655 for three courses at lunch/dinner.

Christmas Eve
Afternoon Tea - As a break from last-minute shopping, a festive afternoon tea is being served on Christmas Eve, with Christmas cookies and hot apple cider; sandwiches; and pastries and scones with home-made jam and Devonshire clotted cream, priced at $250, or $480 for two.
Christmas Eve dinner - A season highlight, the festive six course meal is priced at $1,200 per person including roast goose and traditional Christmas pudding.  A three-course children's menu with roast turkey is also served on Christmas Eve, priced at $500.

Christmas Day
Christmas Day lunch -  A four course lunch priced at $650  features traditional oven roast glazed turkey as the main course, and dessert options of Christmas bourbon pecan pie or apple-raisin strudel.
Afternoon Tea – As before, a traditional Christmas afternoon tea is served from 3.30 – 5.30pm.
Christmas dinner - Featuring five courses at $950 including lobster chowder, grilled wild salmon, and traditional turkey or roast beef for main courses. The menu is completed with chilled raspberry and champagne soup, and dessert of Christmas pudding or apple raisin strudel. Children's and vegetarian options are again available, and the same menu can be served in a private dining room, with a minimum spending of $24,000.

Boxing Day
Boxing Day brunch - On 26 December the brunch features three courses at $600.

New Year’s Eve
New Year’s Eve Gala Dinner - Chef Kunz is presenting a bespoke celebration menu that includes lobster, black truffle, langoustine in rose champagne, milk-fed veal rack, Mont D’Or walnut raising bread, chilled calamansi and pineapple soup, and chocolate banana strudel. The New Years Eve Gala Dinner is priced at $1,650 per person.

New Chef, New Menus

With a hefty helping of experience, a generous serving of skill and a whole lot of gusto, executive chef, Danilo Morri is the latest import from Italy at contemporary Italian restaurant and patisserie, GVSTO. Morri brings his unpretentious and well-studied style of Italian cooking to the Central eatery, enhancing the popular semi-buffet lunch and adding his own signature twist to the dinner menu.

Chef Danilo has spent much of his career working in hotel kitchens in Rimini, Italy and most recently, was a teacher of “La Cucina calda e fredda e buffet”, a culinary training course in Nuovo Cescot Bologna where he imparted his knowledge of food design for bars and restaurants in the region on to chefs and restaurant owners.

His simplistic style of quality Romagna Italian cuisine is explored in his signature dishes such as squid ink spaghetti with seafood, Lasagne, Ossobucco and truffle cream beef tenderloin.

Throughout the month of December, Chef Danilo debuts his festive four-course menu for $488. The menu offers roasted veal with radiccio trevigiano and pecorino cheese served with black olive pesto to start, followed by cappelletti in broth (or with ragu sauce). Guests then enjoy stuffed turkey breast with mixed herb vegetable and parmesan cheese served with porcini mushroom then traditional panettone with fresh cream for dessert.

On Christmas Eve, Chef Danilo prepares a six-course menu for $688 that includes the four dishes from the December Festive menu with an additional first course of a crepe bag filled with herbed fish ragu, and a braised sea bass with ratatouille in balsamic vinaigrette served with mashed potato as an added second course. On Christmas Day there is a semi-buffet menu.

In addition, there is also a new a la carte menu, and a set lunch option for $180 or $210 for three courses.

Turkey Hutong Style

Hutong, aqua restaurant is offering a contemporary twist on tradition with the introduction of an inspired turkey Shandong soup noodle dish. Based on the restaurant's popular Dan Dan noodles, the Christmas version of traditional Shandong soup noodles comes with roast turkey instead of duck, Chinese spices and a creamy sesame infused soup that will be available throughout the month of December priced at $68 per set.
??The new addition to the menu will also be supplemented on 24 and 25 December by live noodle pulling demonstrations from a noodle master to Hutong who will present three 45 minute noodle making and live hand pulling demonstrations for guests to enjoy in the heart of the dining room. ??For customers already enjoying the Hutong festive set menu, the Shandong Noodles came as one of the courses, but customers can also order them as an a la carte menu item.

Advent Celebrations

Kowloon Shangri-La is observing the Western tradition with an Advent Calendar of a range of dining experiences as the festive season sets in to ensure guests a most joyous Christmas and New Year.

Cafe Kool - Guests can look forward to festive gourmet delights from 29 November to 25 December 2009 with a medley of daily Christmas specialties on the dinner buffet. The highlights include Baked Oysters; Abalone Congee; Asian-Style Steamed Garoupa; Tandoori King Prawns; Mini Angus Beef Steak; Grilled and Baked Boston Lobster; Roast Kangaroo Loin; Malay-Style Sautéed Crab; and lots more. The Advent Calendar, featuring windows for each day, will be placed in the restaurant to reveal each day’s specialty. On 25 December, guests can enjoy a Christmas buffet for both lunch and dinner, offering a compilation of all the Advent specialties. For New Year’s Eve, guests indulging in the buffet from 9 p.m. to midnight can also enjoy free-flowing Prosecco.

Angelini - Every Sunday from 29 November to 20 December 2009, Angelini presents an Advent lobster lunch menu featuring unlimited servings of Boston lobster, a buffet of authentic Italian antipasti, salads, soup and home-made desserts based on Chef Vittorio’s mama’s recipes, and a choice of the chef’s signature dishes from different regions in Italy, complemented by free-flowing Champagne. On 26 December, which is also known as Santo Stefano’s Day in Italy, Mr Stefano Bassanese, Angelini restaurant manager, proudly presents a lunch buffet with free-flowing Champagne to celebrate this special occasion. During dinner guests can enjoy a complimentary glass of wine, chosen specially by Mr Stefano Bassanese to accompany each course ordered.

Lobby Lounge - Every Saturday and Sunday from 29 November to 20 December 2009, guests of The Lobby Lounge can indulge in the festive afternoon tea buffet, offering the season’s favourites, overlooking Victoria Harbour. In celebration of Saint Stephen’s Day on 26 December, guests can relish a lunch buffet with free-flowing Rosé Champagne. On 1 January 2010, guests can enjoy a Deluxe Champagne Brunch featuring caviar and foie gras with free-flowing Rosé Champagne.

Tapas Bar - Every Thursday and Sunday from 3 to 24 December, guests will also receive a complimentary second bottle when they buy one bottle of Champagne. In celebration of St Nicholas Day on 8 December, guests can enjoy free-flowing Champagne along with a pass-around of canapés and a 10g portion of caviar.

Thai Cooking Classes

Due to an overwhelming response, the Grand Hyatt's Chef Mum will host a second series of Thai Cooking Classes starting in November featuring three dishes per class. Hailing from Bangkok, Chef Mum’s highly acclaimed home-style Thai cuisine focuses more on the harmony among the four cardinal flavours of sweet, sour, salty and spicy than on other Thai forms. She says “Thai cooking is a creative and fun process of blending and balancing different flavours, from simple sauces and salads to complex curries and delicate appetisers.”

During each session, participants will learn about Thai ingredients and their sources, tasting different primary flavours, as well as the secret to combine them. The classes are available from 27 November to 9 January (except 25 and 26 December 2009), every Friday and Saturday from 2:00pm to 4:00pm. Each class is priced at $850 per person or book all six classes at $4,500 per person. The price includes a welcome drink, interactive cooking, a light meal, a recipe book and a special gift from Chef Mum.

The featured dishes are Spicy Chicken Soup with Lemongrass, Sweet Basil and Mint Leaves; Rice Cracker with Minced Pork and Shrimp Dip; Duck Red Curry; Boiled Egg served with Thai Style Mushroom Sauce; Fresh Fruit Salad with Chilli Lime Dressing; Sago Pudding with Corn Seeds and Taro wrapped with Pandan Leaves and many more.

Executive chef Philippe Labbé from Shangri-La Hotel, Paris will make a guest appearance at Restaurant Petrus, from 25 November to 1 December. The sojourn in Hong Kong is part of Chef Labbé’s culinary tour of Shangri-La hotels in Singapore, Manila, Abu Dhabi, Shanghai and Kuala Lumpur, where he will orchestrate his cuisine of great French classics and modernity.

Chef Labbé encourages diners to discover new flavours in his dishes, and frequently features two of his favourite ingredients, tomatoes and truffles, in his menus. Three signature dishes that Chef Labbé will prepare for his Hong Kong debut are Raw Vegetables from Provence, Mango and Passion Fruit marinated Prawns, Flowers and Herbs; Royal Sea Bream seared with Young Vegetables and Herbs, New Carrot Emulsion; as well as Wild Thyme Iced Parfait, Grand Cru Chocolate Ice Cream.

The lunch and dinner degustation menus are priced from $398 and $1,280 respectively.

Festive Four Seasons

From 25 November through until the end of the year the Four Seasons will be offering festive lunch menus in its restaurants. Blue Bar is adding holiday dishes to its popular buffet priced at $250 per person, Caprice has a two-course ($380) and four-course ($420) set lunch, Lung King Heen is offering an eight-course menu for $450, and The Lounge has a three-course menu priced at $350 per person.

The Lounge's afternoon tea will be given the Christmas treatment, including gluhwein (mulled wine) and panettone, and live music on 12, 13, 19, 20, 25-27 December and is priced at $265 per person.

On 24, and 25 Caprice, Lung King Heen and The Lounge will be serving special dinner menus, while dining at Caprice or Lung King Heen on New Year's Eve will entitle the diner to enjoy the countdown party in Blue Bar. Or spend the 1st of January recovering with the aid of a celebratory set lunch or afternoon tea at the various restaurants.

An idea for those who are not sure what to buy their loved one is the Bubba Gump Gift Card, with special offer, acts as a credit voucher allowing people to eat, drink and buy souvenirs at the Bubba Gump Souvenir Shop next to the restaurant. The cards are available in two denominations - $400 or $600. When purchasing a $400 Bubba Gump Gift Card for friends or relatives, a $100 Gump Card will be rewarded instantly to the buyer, and when buying a $600 Gift Card, a $200 Gump Card will be rewarded. The Gump card is valid 1 January to 30 April 2010.

The restaurant is also offering a three-course menu priced at $425 that is available all day on New Year Eve that includes a welcome glass of champagne and unlimited sodas, beers, white wines and red wines. Customers can choose from Yin Yang Salad, Cajun Shrimp or Calamari Rings as appetisers. For mains, Baby Back Ribs or Steak & Shrimp Combo is the meat-lovers’ choice while customers who love seafood can enjoy the infamous Shrimper’s Heaven or Stuffed Shrimp with crab. Key Lime Pie for dessert waves goodbye to 2009 and welcomes in 2010.

Two Cuisines Festivities

ROKA is warming up for a cosy fireside festive season around its Japanese robata grill, complete with a Christmas Menu twinning western delicacies with the restaurant's premium signature specialties. The festive menu complementing ROKA's popular charcoal grill favourites is served from 1 November and is priced at $888.

The 5-course gastronomic feast (set to be the main menu on 24 and 31 December) includes premium delicacies such as caviar and prized Toro, with a sushi and sashimi platter, foie gras and quail skewers, and grilled langoustine. A highlight is Butterfish Tataki Salad, a unique new dish not often seen in Hong Kong due to the scarcity of the ingredients.

Specialty tempura is also on the menu which will be showcasing both premium ingredients and enticing new dishes. Served until Christmas Eve, the celebratory menu is completed with a platter of creative, homemade desserts.

For those that prefer to stick to the comforting basics, ROKA's a la carte menu also continues to be served.

Tapas Bar at Kowloon Shangri-La is celebrating the lucky number eight with The 8th Estate Winery, Hong Kong’s first winery. Guests can take advantage of this opportunity to be one of the first to savour the winery’s first red and white vintages, which are only available in Tapas Bar.

Priced at $88 per glass and $388 per bottle, the wines featured are Sauvignon Blanc, Un-oaked Chardonnay, Heritage and Shiraz. 30 Hairy Crabs

The Chinese have a saying: crabs are plump when the autumn wind blows. So now the weather is cooler, it is a reminder that the crab season is here, and among them the hairy crab is considered king. This year, head chef Kenny Chan of Dong Lai Shun has devised a selection of hairy crab dishes, each prepared and cooked in a different way.

Highly recommended are Steamed Shanghai Superior Hairy Crab, Cold Brown Noodles with Crabmeat, Steamed Organic Red Rice with Crab Roe, Steamed Crystal Sheets wrapped with Crab Roe, Baked Crab Shell filled with Crab Legs, Deep-fried Spring Rolls filled with Crab Roe, Pan-fried Dumplings filled with Crab Roe, Steamed Sliced Prawns with Crab Roe, and Deep-fried Rice Paper rolled with Crab Roe and Scallop.
