Pasta with Sardinian Shrimp, Saffron and Parsley Purée - Angelini

Serves 4
Ingredients
Garlic 1 clove
Saffron A little pinch
Parsley 50g, finely chopped
Shrimp 2 per person
White wine
Olive Oil
Penne or Rigatoni Pasta
Method:
1. Cook the pasta with salted water and put aside.
2. Sauté the shrimp with garlic. Add a little pinch of saffron and a splash of white wine. Let the sauce reduce.
3. Mix the pasta with parsley. Add olive oil, toss the pasta so it all mixes together.
